THE FOOD: Turkey Recipes

Jalepeno Turkey Burger (makes 6 servings)
1 lb ground turkey
1 onion, chopped
2 jalepeno peppers, finely chopped
1 clove garlick, minced
1 egg, slightly beaten
1/2 cup bread crumbs
1/2 cup tomato salsa
6 slices Mozzarella cheese (you can use any cheese you prefer).

Combine ground turkey, onion, jalapeno peppers, garkic, egg and bread crumbs. Form into 6 patties. Grill on med-high for 5-7 minutes on each side, until no longer pink in center. Divide salsa and cheese evenly among burgers. Heat until cheese melts.


Tangy Glazed Meat Loaf
1 lb ground turkey
1/4 cup bread crumbs
1/3 cup milk
1 egg, beaten
1 small onion, chopped
Salt and pepper to taste
1/2 tsp. Poultry seasoning
2 tbsp catsup

Combine bread crumbs and milk in a bowl. Add turkey, egg, onion, seasoning and catsup. Mix well and pat into a small meat loaf pan. Bake at 350 degrees for 40 minutes. Combine glaze ingredients and spoon over meat loaf. Bake for 20 minutes more. To make the glaze, combine:

2 tbsp brown sugar
1/4 cup catsup
1/4 tsp nutmeg
1 tsp dry mustard


Turkey Enchiladas

Sauce
28 oz tomato sauce
1 tsp oregano
1 Tbs garlic powder
1 1/2 tsp chili powder (more to taste if you like)
2 tsp onion powder
1 tsp or less salt
1/2 tsp cumin

Mix it all up and heat through.


Enchiladas
2-3 cups chopped turkey (or chicken)
12 corn tortillas
3 cups grated Cheddar cheese
1/2 cup diced onions (optional)

Put a bit of sauce in a baking dish. Dip corn tortillas in the sauce to soften them, lay some diced turkey and grated cheddar cheese on them (and onions, if using), roll them up, and lay in the baking dish. Cover with the rest of the sauce and some extra grated cheese. Cover the dish and bake at 350 for 30 minutes or so.


Turkey Casserole
2 cups diced turkey
1 1/2 cups leftover gravy
salt and pepper to taste
1 1/2 cups cracker crumbs
1/4 cup butter

Combine the turkey, gravy, and 1/2 the cracker crumbs with salt and pepper. Mix and put into a greased casserole dish. Melt the butter and brown the rest of the cracker crumbs for a few minutes, then put them on top of the casserole. Bake at 350 for 30 minutes.
