Cornbread
1 1/2 cups milk
1 1/2 tbsp vinegar
1 cup cornmeal
1 cup unbleached flour
2 tbsp sugar
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
2 tbsp oil

Preheat oven to 425 degrees.

Combine the milk and vinegar and set aside.

Mix the cornmeal, unbleached flour, sugar, salt, baking powder, and baking soda in a large bowl. Add the milk mixture and the oil. Stir until just blended. Spread the batter evenly in an oil-sprayed 9x9-inch baking dish. Bake until the top is golden brown, 25-30 minutes. Serve hot.
