Porcupine Meatballs (makes 4 servings)
1 lb lean ground beef, uncooked
1 egg
1 cup uncooked brown or white rice (NOT ÒMinute RiceÓ)
1 8oz can of tomato sauce
1 28 oz container of: spaghetti sauce OR stewed tomatoes OR salsa
Mix egg and ground beef; stir in rice and blend until rice is mixed well. Shape into meatballs 1-2Ó according to your preference. In a Dutch Oven, pour tomato products and add uncooked meatballs. Using medium heat on stovetop, bring the mixture to a boil and reduce heat and simmer for about 1 hour. As an alternative, you can use a slow cooker, and cook on medium for 6-8 hours. Serve with pasta OR mashed potatoes OR rice.

Beef Stroganoff
1 lb lean ground beef or diced sirloin
1 package egg noodles
1 can beef broth
1/2 cup sour cream
1 onion (diced)
2 teaspoons garlic (minced)1/2 tablespoons Thyme
1/2 tablespoons Oregano
2 tablespoons flour
Salt & Pepper
Prepare egg noodles following directions on package. Brown beef and drain fat. Set beef aside. Sautee onion and garlic until golden brown. Combine all ingredients. Stir and simmer for 10-15 minutes. For thicker consistency, add a touch of all-purpose flour. Salt and pepper to taste. Serve over cooked egg noodles.

Ground Beef Layered Casserole
3 potatoes, peeled & sliced
1 lb diced ground beef (or turkey)
3 carrots, sliced
2 tbsp oil
1/2 cup uncooked rice
1 onion, sliced
1 lb diced ground beef (or turkey)
1 quart canned tomatoes
salt & pepper to taste
1 Tbs brown sugar
Layer the ingredients as listed, ending with salt and pepper. If desired, sprinkle with brown sugar.
Bake at 300 degrees for 3 hours.
Winter Soup
1 lb diced beef
1 cup chopped celery
1 cup chopped carrots
1 cup cubed potatoes
3 cups water or beef broth
1 quart diced tomatoes
1 tsp salt
1/4 tsp pepper
1 bay leaf
1/2 tsp basil
Combine all ingredients in a large pot and bring to a boil.
Simmer on medium heat for 30 minutes. Enjoy!
Beef Fajitas (makes 4 servings)
20 oz. Sirloin Beef Tips (fajita cut)
Lime juice from 2 limes
3/4 tsp. garlic powder
1/2 tsp. freshly ground black pepper
1/2 tsp. Tabasco sauce
1 med. onion
1 med. green or red pepper
4 tbsp. oil
Four tortillas, warmed
Place beef strips into shallow dish. Combine lime juice, garlic powder, black pepper and Tabasco sauce and mix in beef, cover and refrigerate several hours or overnight. Cut onion and pepper into 1" chunks. Place 2 tablespoons of oil in frying pan. When oil is hot, brown onion and pepper until onion is slightly brown on edges. Remove onion and pepper; set aside. Add 2 tablespoons oil, brown beef, add onion and pepper; cook for 1 minute. Serve in warm flour tortillas with condiments of our your choice.
