Amazing Sixteen Bean Soup
1 1/2 cups sixteen bean soup mix
2 tbsp salt
2 quarts water
1 large onion
1 quart tomatoes (chopped or pureed)
1 pepper or 1 teaspoon chili powder
1 tablespoon lemon juice
Salt and pepper to taste

Wash beans thoroughly. Place them in a large pot, add salt, add water and cover overnight. In the morning, drain the beans and add two quarts of water. Bring to a boil, then simmer slowly for 2 1/2 to 3 hours. Add remaining items and simmer for another 30 minutes or so. Delicious when served with crackers or bread and a green salad!
